Michael Pollan, author of The Omnivore's Dilemma: A Natural History of Four Meals , recently made a succinct distinction; consumers shop with a primary focus on value (price) and citizens make their buying decisions based on values (for the planet and its people).
Carlo Petrini, founder of the Slow Foods movement and of the University of Gastronomic Sciences in Italy , noted that the wisdom, profundity and cultural meaning of “food” has been lost in the industrial food production ethos prevalent in the modern world. He reminds us that: gastronomy is an interdisciplinary science, with its historical, anthropological, agricultural, economic , social and philosophical aspects; asks us to open our minds to the complexity of foods systems and think again about our approach to our daily bread; and to give food back to its central role in our lives.
